ABOUT THE CAVIAR:
- Royal Ossetra Caviar is a Malossol (Russian for "low salt") caviar from the sturgeon fished in
the Russian waters of the Caspian Sea, and has a dark and rich color and incredible flavor.
Royal Ossetra is very low in salt, and its subtle sweetness make it the perfect black caviar.
- Tzar Imperial Beluga Caviar from the Caspian & Black Seas is among the rarest and the most magnificent
of all caviar. This almost translucent pale grey caviar stands above the rest with its delicate buttery
flavor and large perfect pearls. The Malossol (Russian for "low salt") Tzar Imperial Beluga,
also known as Beluga 000, has no equal.
- Tzar Imperial Ossetra Caviar comes from the Russian side of the Caspian Sea, and may be
the prettiest caviar in the world. This Russian caviar is famous for its golden brown grains and a mild,
nutty flavor with a hint of fruit and sweetness taste. This rare delicacy once reserved for the Tzar's
table, can now be served at yours.
- Tzar Imperial Sevruga Caviar ... this trim, comparatively small species is
the most plentiful and the quickest to mature. Generally ranging from light gray to almost black,
Tzar Imperial Sevruga Caviar can at times be paler than the lightest Beluga. The petite, clear,
exquisite eggs have a smooth, rich, almost buttery quality - a uniquely balanced flavor that provides
one of the great after-tastes of gustatory indulgence.
- Baerii Caviar (Uruguay) or
"Esturiones Del Rio Negro" is a Siberian sturgeon caviar that has been farmed in Uruguay, and is both
beautiful and flavorful. This caviar is part of the Osetra caviar family, but is slightly smaller in size.
Being farm raised, this caviar offers a flavor that is both pure and delicate.
- American Hackleback Caviar from the Hackleback Sturgeon (Scaphiryhnchus platoryhnchus) is
indigenous to the Missouri and Mississippi River systems. It is smaller and faster growing than most
of the other sturgeon species growing to about 38 inches at maturity. American Hackleback Caviar
is prized for its soft mild flavor and velvety black grains.
- American Paddlefish Caviar has a taste so cherished by
Russian clientelle that it is becoming a serious rival to the market share of Russian Caviar in the United States.
This roe of a fresh-water sturgeon, which was served at the White House, comes in many shades, and ranges
from pale grey to dark steel in color. The texture is smooth and silky and it has a rich, complex flavor
quite similar to Tzar Russian Sevruga Caviar.
- Alaskan Red Salmon Roe is from the
cold northern waters surrounding Alaska. Known for its special taste, this perfectly salted large grain
salmon roe is wonderful with a dollop of crème fraiche and Russian Style Blini.
- Golden Whitefish Caviar from the Great Lakes, also known as
American Golden is indeed golden in color.
Small, crisp textured berries have a delicate, lightly salty flavor and are
wonderful on new potatoes, with or without sour cream.
- Tobiko or "Tobikko", also known as Flying Fish Roe, is becoming more
popular with chefs in the states as it is quite versatile, and works well with variations of
Japanese and even American cuisine. These roes work well as garnishes of hors d'oeuvres, with sushi and in many Japanese recipes.
